Katong Laksa for Spymama
This morning the sky looked gloomy. It felt like it was going to pour again.. The weather has been like that for more than a week. Spypapa wanted to go to the park this Sunday but I hope the weather brightens up a little.
Are you having such a crummy weather lately? Lucky for Spymama my mood isn’t crummy. Because the school ends today and Spykiddo1 and Spykiddo2 will be having their week-long break.
This morning Spymama went to get some fresh Chicken. Thinking of roasting a Chicken tomorrow, so wanna marinade it later on. Spymama had not been out to the market for a while and no spying on bags for a while. Spymama has a bad back so don’t want to be caught in the rain because I just don’t like to carry the brolly.
Anyways, I had a good *burp* sinful coconut based breakfast. I figured my cholesterol level is pretty ok so far so no worries. I had ‘Katong’ laksa. Singapore has two types of laksa which are coconut based. Katong Laksa is popular in the east side of Singapore (hence the name, Katong) and is eaten with a spoon. Their white glass noodles are short (wonder if they cut them first?) and the gravy soup tastes heavenly, more coconut and rich in rempah (spices).
